More than 20 years after starting their restaurant careers selling dogs, chips and sodas near the Statehouse, Kevin and Lori Ames are opening their third quick-service restaurant this week near the corner of Broad and High streets.

Burgers, Dogs & Fries, at 20 N. High St., follows an approach that's become a national trend by offering simple, straightforward fare using high-quality ingredients freshly prepared at a low price.

The Ameses' latest venture follows Cinco, a burrito place a la Chipotle at 1 S. High St., which opened last winter, and Cafe Lola, a more eclectic diner known for its salads, which opened at 12 E. Broad St. in spring 2008.

"We're in a simpler time," Kevin Ames said. "The more you can pare things down, the more authentic it is."

"There are a million different ideas with five different ingredients -- a ton of things you can do," Lori Ames added. "If you're trying to watch 40 or 50 products, it's harder to keep things under control.
