So mark your calendars with a blazing hot red X for Saturday, Feb. 21, because the mighty Market's going to be bustling that whole spicy day with cooking demos and contests, a wing-eating competition, music and much more.

The fuse on this meat-and-heat gets lit at 8 a.m. and continues burning with the following highlights: a fiery foods breakfast exhibition with the esteemed CaJohn pepperhead people; a hot-wing-sauce battle open to the public at the unholy hour of 10:30 a.m.; a professional chef chili contest at 11 a.m.; an amateur chili cook-off at noon; and Wings of Fire! wing-eating wars at 1:15 (hot division) and 3 p.m. (insanely hot division). Start working on your iron guts and incendiary recipes pronto, because winning contestants stand to be awarded loads of good-as-money North Market certificates.

On a personal note, I never miss this one, because it's so much crazy fun and the Market counts on me to bring the official fire extinguisher.
