How did you get the job?

I came directly from college at the Culinary Institute of America and I guess my credentials were enough for them. I just applied and luckily they called me back. They needed someone with a solid flavor profile, a solid palate they could rely on. And I showed interest and just kept at it.

What’s a typical day like?

I come in and make some test batches, and meet with Jeni a lot to see what ideas she has. I do anything I can do to help her as far as what flavors she wants to see.

How much ice cream would you say you eat every day?

From a cup to a pint every day.

What did you want to be when you grew up?

I actually wanted to be an ice cream taste tester so it was really cool when I saw the job, and I knew this is what I want. It is literally a dream job.

Do you ever have a hard time keeping track of all the flavors?

No, my first week on the job I had to test every ingredient and every pint of ice cream. Every ice cream sandwich. So I was really well acquainted with everything.

Did anything surprise you about the job?

It’s really fast paced. Other test kitchens have months and months to do it but we’re constantly working with the harvests and we have to work with shorter deadlines than I expected.
