How did you start bartending?
I was always in love with bartending. As a kid, I would take everything from the fridge - apple juice, Hawaiian Punch and everything else - and mix it all together.
M*A*S*H was my favorite show when I was little. They drank Scotch, so I would have this little glass with five ice cubes and a little apple juice in it. There I was, sitting in front of the TV pretending to drink Scotch with them. My mom would always laugh at me.
What do you like about bartending?
I like working with people, talking to them. I like to make good drinks for people. You get a lot of face time and interact with your customers and figure out what they want.
I like creating new drinks. The owner lets me use creative force to come up with drink menus. Since I started here, I have about five or six drinks that are my sole creation.
What is your home state of Montana like?
Montana is very clean, very beautiful, very pure and it has a lot of good memories for me. I lived there until I was seven and we go back for a month every summer.
Billings sits in this huge crater they call the Rims. You hike 500 feet up there and you can see everything.
What would you do if you weren't bartending?
Because I love people, working with people, I would say I'd be a teacher or a psychologist.
I also want to own my own restaurant. That is a big thing that I want to do. It's one of my goals.
What kind of restaurant?
An upscale-casual place; American with other influences. I'm Irish and Mexican, so a little bit of the Mexican flair in there. I've got a lot of years in my grandma's kitchen helping her make tamales and enchiladas and good stuff like that.
I think I could put a really good twist on it and it would be appealing to the average diner. But people love Mexican food, too, so you never know.
