Darista Cafe is hosting a one day pop-up at Hills Market Downtown this Saturday, Feb. 21, featuring its version of the Latin American specialty patacon. The pop-up runs from 11 a.m. to 3 p.m., and will also feature drink specials.

Darista chef Dara Schwartz has served the dish before at other Hills Market pop-ups. This latest one was inspired by a regular customer who asked her to make patacones for his wife's birthday. Instead, she turned it into an event.

Schwartz will be crafting her signature Patacón Maracucho sandwiches, filled with cilantro chicken, tomato, avocado crema, mozzarella and baby greens tossed in a Sriracha vinaigrette. Instead of the traditional bread, she's serving the sandwiches between two fried plantains.

The "Pints" portion of the event is supplied by Four String Brewing, which will be pouring a special version of its Big Star White IPA, the Mango Key Lime White IPA. The first 20 customers to order a pint will get a free Four String pint glass.
